Vegetarian Breakfast Ideas That Are Full of YES!

14316960_689878517819519_7185481734882949434_nA member of Yes Parenting For Happy Families, my awesome membership group, asked me for some vegetarian breakfast ideas this week. Since I just so happen to be the Queen of breakfasts, I had lots of ideas to share with her. I thought I’d share them here with you as well. If you like them, please feel free to share them!!!

• Egg muffins with mixed veg in. You can make lots in one go and keep them in the fridge in a tupperware. Basically omelette mixture baked in a muffin tray.

• Banana omelette – fry sliced banana and then add whisked egg.

• Banana pancakes made with oats, eggs and banana.

• Breakfast biscuits dipped in your favourite drink – oats, dates, butter or coconut oil, honey, mashed banana, cinnamon etc. Mix all together until it’s the right kind of consistency and then bake. Again, you can store these in an airtight container.

• Mixed veg fried and served in wraps with some cheese or salsa

• Soup – seriously! this is one of my favourite winter breakfasts.

• Roast sweet potatoes with scrambled eggs or fried eggs

• Pink porridge – porridge made with coconut milk and water with frozen summer berries stirred in during cooking. You might want to add some honey on top if it’s not quite sweet enough for you.

• Hummus with carrot, celery, pepper sticks

• Sweet potato toast (made under the grill or in a toaster) with nut butter and banana or other toppings.
